Good Afternoon,
Only one more day before Christmas! We have only a light amount of snow on the ground, and I suppose it will soon melt away. The sky is slightly overcast but the sun is faintly shining through.
Has everyone finished their shopping for family and friends? I imagine it will be past Christmas by the time you get to read this. I hope we can all focus on the birth of Jesus and why He came and what He did. He came to redeem all mankind.
This last month folks have been busy with Christmas related activities. Schools had programs and gift exchanges for the pupils. Parents, grandparents, siblings, friends, etc attended. The youth enjoyed an evening of going caroling and afterwards they had a refreshing, warming snack at one of their homes.
On the Sunday before New Year’s Day our church plans to have a carry in lunch of mashed potatoes, sausage and sauerkraut, along with salads and desserts. After lunch we will spend some special time of praise and worship singing.
Now with the ground being frozen it is a good time for farmers to spread manure. Ladies get busy with sewing and doing projects that they don’t have time for during the summer months.
I found a recipe in Just You & Me cookbook that reminded me of my younger days when we would come in from doing chores and it would be cold and dark outside. Old fashioned Bean Soup was a favorite of mine.
3 Tbsp butter
2 cups milk
3 slices homemade bread
2 hardboiled eggs
Salt and pepper to taste
½ cup navy beans, smothered in brown butter
Brown butter in saucepan and add milk. Meanwhile, cube the bread. When milk is hot add cubed bread. Do not boil. When soup is in serving bowls top with warm sliced hardboiled eggs and ¼ cup of the beans. Use canned beans or cook your own. Serve sweet pickles or pickled red beets on the side.
